Butterscotch Oatmeal Cookies

1 c Flour
½ tsp Baking soda
½ tsp Salt
½ c Shortening
1 c Brown sugar
1 Egg
1 tsp Vanilla
1 c Oatmeal
½ c Chopped nuts
1 c Coconut

Sift together flour, soda, and salt. Cream shortening and sugar. Add egg and vanilla; beat until light and fluffy. Stir in flour mixture, oats, nuts and coconut. Chill dough, shape into small balls and place on greased cookie sheet. Bake at 325˚ for 16 to 20 minutes.
