Noel Fruit Cookies (Lebkuchen)

1 Egg
¾ c Brown sugar
½ c Honey
½ c Dark molasses
3 c Sifted enriched flour
1-1/4 tsp Cinnamon
1-1/4 tsp Nutmeg
½ tsp Cloves
½ tsp Allspice
½ tsp Soda
½ c Chopped mixed candied fruits and peels
½ c Slivered blanched almonds

Beat egg; add brown sugar and beat till fluffy. Stir in honey and molasses. Sift together dry ingredients; add to first mixture; mix well. Stir in fruits, peels, nuts. Chill several hours or overnight. On lightly floured surface, roll to ¼ inch. Cut in rectangles 3-1/2 by 2 inches. Place on greased cookie sheet. Bake in moderate oven (350˚) about 12 minutes. Cool slightly before removing from pan.

Makes about 2 dozen.
