This cooky is supposed to live up to its name and be very thin.
Cream
½ c Sugar, sifted
1-1/2 Tbls Butter
Beat in:
1 Egg
½ tsp Vanilla
½ tsp Grated lemon rind (optional)
Sift ¾ c Bread flour. Resift with:
1/8 tsp Salt
1 tsp Baking powder
Add the sifted ingredients to the sugar mixture in 3 parts alternately with 3 Tbls milk. Beat the batter after each addition until it is smooth. Drop it from a teaspoon onto a greased baking sheet. Place the spoonfuls well apart as the dough spreads readily. Bake the cookies in a moderate oven (350˚) for about 7 minutes.

Lemon Wafers or Drop Cakes
Follow the rule for vanilla wafers. Substitute 1 tsp lemon juice for the vanilla. Add ½ tsp grated lemon or orange rind.
