2 loaves (16 oz each) Frozen whole wheat bread dough, thawed (Or one recipe of Dinner Rolls)
1 Egg white, slightly beaten
1 tsp Water
Course salt
Thaw dough in refrigerator overnight. From each loaf, shape 12 balls, 1-1/2” each. Roll each ball into a rope about 14” long. Shape into pretzels by forming a knot and looping ends through. Arrange pretzels 1” apart on well-greased baking sheet. Let stand 20 minutes.
Brush combined egg white and water on pretzels, then sprinkle with coarse salt. Place shallow pan containing 1” boiling water on lower rack in oven.
Bake pretzels on cookie sheet on rack above water at 350˚ 20 minutes or till golden brown.
Makes 24 pretzels.
Variation 1: Pretzel sticks can be made by beginning with balls rolled into 8” sticks. Try pretzel letters.
Variation 2: Roll sticks 4 to 6” long in mixture of melted butter, cinnamon, and sugar before baking.
