Crust
1 cup flour
½ cup butter
¼ cup confectioners’ sugar
Blend thoroughly and press evenly into 8x8x2” square pan. Bake 20 minutes at 350˚.
Filling
2 eggs
1 cup granulated sugar
½ tsp. baking powder
¼ tsp. salt
2 Tbsp. lemon juice
Beat these ingredients together. Pour over crust. Bake 20 to 25 minutes more at 350˚.
Do not overbake!!!
