Dough:
1 c Bran (not cereal)
1 c Flour
1 Tbls Baking powder
1 tsp Soda
½ tsp Salt
¾ c Lt brown sugar
½ c Pecans, chopped
2 Eggs, beaten
1/3 c Oil
1 c Buttermilk
¼ c Butter, melted
Topping:
¼ c Sugar
1 tsp Cinnamon
1 Tbls Flour
Mix dry ingredients together, including brown sugar (mash lumps with spoon). Combine eggs, oil, and buttermilk; add to dry ingredients and mix well. Turn batter into 9” cake pan and spread with melted butter. Sprinkle with topping and bake at 350˚ for 30 minutes or until done.
