Beat together
2 Very ripe medium bananas
½ c Butter or margarine (1 stick)
Beat in
1-1/2 c Flour (I use half whole wheat)
¾ c Sugar (This can be cut in half)
2 Eggs
¼ c Milk
2 tsp Lemon juice or vinegar
1 tsp Baking soda
½ tsp Salt
½ c Chopped walnuts or pecans (optional)
Do not over beat; this will make the bread coarse. My mother-in-law suggested to mix the milk, lemon juice (or vinegar) and baking soda. When it finishes foaming, add it in. Turn into greased 9×5” loaf pan. Bake at 350˚ until bread springs back when touched lightly in center, about 55 to 60 minutes. Cool before removing from pan.
Makes 1 loaf
If you use a glass pan, turn the oven down to 325˚.
