Corn Pancakes

Golden brown pancakes chock-full of corn. Pass the butter and maple syrup.

Sift together:

1-1/4 c Flour
1 tsp Baking powder
½ tsp Salt

Combine and add to dry ingredients:

2 Eggs, beaten
1 c Milk
2 Tbls Salad oil

Stir in 2 cups of corn.

Bake on preheated, lightly greased griddle as for pancakes. Serve with butter and honey or syrup.

Makes 16 (4”) pancakes
