Black Beans & Rice

2 onions, chopped
2 green bell peppers, chopped
3 garlic cloves, minced
1 tablespoon ground cumin
1 teaspoon white pepper
2 cups rice
4 (14-ounce) cans black beans
2 (14-ounce) cans diced tomatoes
2 cups water
1/4 cup apple cider vinegar
Salt to taste

* 1lb of ground turkey (optional)

Heat a large pot over medium-high heat and add oil. (*Brown turkey and drain fat, if desired.) Add onions, peppers, garlic, white pepper, and cumin. Cook for 8 minutes.

Add rice, black beans, tomatoes, water, vinegar and salt and pepper. Bring to a boil, cover and reduce heat to low. Cook for about 40 minutes or until the rice is tender. Serve hot.
