Taco Pasta

2 lb. ground beef
1 large white onion, chopped
1 jalapeño, chopped
2 tablespoons chili powder
1 tablespoon ground cummins
2 (15) oz. can diced tomatoes
3 cups shredded cheese
12 oz. pasta (your choice!)
Salt to taste

In a large pot of salted boiling water, cook pasta according to package directions. Drain, reserving 1/2 cup pasta water.

Meanwhile, heat oil in a large skillet over medium heat. Add onion and season with salt. Cook until tender (5 minutes?) then add jalapeño. Cook 2 minutes more. Add ground beef and cook until no longer pink, 6 minutes. Drain fat, then add chili powder and ground cummins.

Add canned tomatoes, and 1/2 cup reserved pasta water and stir. Then add cheese and let melt, stirring occasionally for 2 minutes. Add cooked pasta and toss until completely combined.
