1 lb of beets (depending on size 2-4 beets), peeled and grated
Olive oil or Butter
Water
Lemon juice or Balsamic vinegar
Salt and Pepper
Saute grated beets in olive oil or butter for a minute or two, add a little water (a tablespoon or so), cover and cook until tender, 5 minutes or so. Toss with lemon juice or vinegar (balsamic). Add salt and pepper. Eat!
