1 T Olive oil
¾ t Dried parsley
1 stalk Celery, chopped
1 t Cajun seasoning
¼ large Onion, chopped
½ t Salt
¼ Green bell pepper, chopped
½ t Old Bay seasoning
1 clove Garlic, minced
1 can (15.5 oz) can Red beans, including liquid
1 Bay leaf
Andouille sausage (optional)
⅛ t Cayenne pepper
¼ t Dried thyme
⅛ t Dried sage
½ c Brown rice, uncooked
1 c Water
To prepare rice: In a saucepan bring water and rice to boil. Simmer 45 minutes.
In a medium sized skillet: Cook celery, onion, green pepper, and garlic in olive oil for 5 minutes. Add red beans (with liquid) and spices. Simmer 30 minutes. Add prepared rice. Simmer 10 minutes. If you desire add andouille sausage.
