Easy Scalloped Potatoes

4 Medium potatoes, peeled and sliced
2 Tbls Flour
1 tsp Salt
1/4 c Finely chopped onions
1-1/2 c Milk (or evaporated milk)
2 T Butter
Paprika or parsley

In a 2.5 quart glass buttered casserole, arrange half the sliced potatoes. Sprinkle with half the flour, salt, and onion. Repeat. Pour in milk, dot with butter. Microwave (high), covered, 15-18 minutes, rotating dish 1/4 turn every 4 minutes. Rest, covered, 5 minutes. Garnish with paprika or parsley.

Serves 4-6

* Sprinkle grated sharp cheddar cheese on top after cooking.

* Potatoes may boil over if they aren’t in container large enough for milk to boil. Container should be about twice as large as amount of food. Buttering rim of dish may prevent this.

* Potatoes may be partially cooked alone before combining with other ingredients to prevent boiling over.
