1# Lentils (2 c), rinsed and picked over
2-1/2 qts Water
1 c Barley
½ c Oil
1 Large onion, chopped (1 c)
2 Large ribs celery with leaves, chopped
1 Large carrot, diced
1 Large potato, diced
3 Tbls Minced parsley
2 c Tomatoes
3 tsp Salt
¼ tsp Pepper
Place all ingredients in a kettle; bring to a boil. Reduce heat, cover, and simmer one hour or until lentils and barley are tender, stirring occasionally. Add more water if too thick.
Makes about 4 quarts. Freeze leftovers. Add more salt and pepper if desired.
