Better Butter

1 c Canola oil
1 c + 2 Tbls Butter

Soften, but do not melt, butter. Add oil. Whisk together. Keep in the refrigerator.

The degree of saturation of the oil determines how hard the better-butter is. If you use olive oil, you’ll need to use more butter or it’ll be too soft to use as a butter substitute.
