Canned or cooked beans (all one kind or little bits of a bunch), drained and rinsed
Combine with an equal amount of salsa (mild, medium or hot—your choice), more or less as you think right. Chop and add an onion, a green pepper—and some celery if you’re feeling particularly energetic.
Warm, this is great spooned over cooked brown rice.
Cold, it’s a salad.
I like this cold for breakfast in the summer. Really—nothing like biting into hot salsa first thing in the morning to jump-kick you right into the middle of your day.
