Taco Salad

Meat sauce: Brown ground beef (1/4# [or 1/3 cup crumbles] per person) with a clove of garlic, some chopped onion and green pepper, if desired. Add 1 Tbl taco seasoning per serving (a whole packet for 4 servings) with a little water.

Make a green salad (iceberg lettuce, romaine lettuce, spinach, kale with shredded carrot, chopped green onions, whatever).

Mix a can of refried beans half and half with salsa.

Chop some tomatoes or halved grape tomatoes.

Shred some Cheddar cheese.

Fill a bowl (or tortilla shell) with the lettuce mixture, spoon meat sauce on, then bean mixture, tomatoes, and cheese. Top with taco sauce or salad dressing—or both if you like.
