Sour Cream Potato Salad

Combine and toss lightly:

6 c Diced cooked potatoes
Chopped onion
Chopped celery
Sliced radishes
Shredded carrot
Salt and pepper
Chopped, cooked Bacon
4 Hard-cooked eggs, sliced

Dressing:

1 c Sour cream (I substitute cottage cheese pureed with a packet of ranch dressing)
½ c Lite or fat-free mayonnaise
1 tsp Prepared mustard.

Let marinate in fridge for a while before serving. Sprinkle with minced parsley or paprika.
