Salad Supper

Combination of salad greens (iceberg lettuce, romaine, kale, spinach, chard, whatever)

Additions of your choice:

Shredded carrot
Sliced radish
Diagonally sliced celery
Sliced cucumber
Sliced summer squash (yellow or zucchini)
Artichoke hearts
Black olives
Beans (black, garbanzo, refried)
Sliced green onions or leeks
Chopped, cooked bacon

Mix (your choice of canned salmon or tuna, shrimp, chopped chicken or turkey) with dressing. Add to vegetables. Serve with wedged tomatoes and hard cooked eggs.

This is a welcome cold meal on a hot day.
