Fresh Vegetable Salad

3 large Fresh tomatoes, peeled and diced
1 large Sweet onion, diced
3 ribs Celery, diced
1 large Green pepper, diced
Salt and pepper to taste
1 dash Garlic salt
¼ c Cider vinegar
2 Tbls Salad oil (optional)

Place tomatoes, onion, celery, green pepper, salt, pepper, and garlic salt in bowl (not aluminum).

In small bowl, combine vinegar and oil. Mix well. Pour over vegetables. Stir gently to mix. Cover and chill in refrigerator several hours or overnight.

Unfortunately, I didn’t discover this recipe (stuffed into one of my mother’s cookbooks) until the kids were in college. It quickly became one of Dave’s and my favorite summer salads.
