Crunchy Tomato Aspic

Sprinkle 2 envelopes unflavored gelatin over 1 c cold water. Dissolve over low heat.

Stir in:

1 clove Garlic, minced
2 c Homemade Tomato sauce (or tomato juice)
¼ c Lemon juice
1 tsp Salt
Dash Hot pepper sauce
Dash Pepper

Chill gelatin mixture until partially set, about 40 minutes.

Stir in:

1 stalk Celery, sliced
1 Onion, chopped
½ Green pepper, chopped
½ Cucumber, chopped (Optional)
Chopped Cabbage

Pour into a 5-cup mold or serving bowl and refrigerate until set. Unmold on lettuce leaves before serving if desired.

Makes 8 (1/2 c) servings

Use your imagination with vegetable additions to this recipe. Lots of fresh produce is available to choose from. Go nuts.
