1 #2 can (2-1/2 c) Crushed pineapple
2 pkgs Cherry-flavored gelatin
3-1/4 c Sugar
2 c Hot water
½ c Cold water
1 to 2 Tbls Lemon juice
1-1/2 c (about 1#) Ground raw cranberries
1 small Orange, ground (1/2 c)
1 c Chopped celery
1/2 c Broken California walnuts
Drain pineapple, reserving syrup. Combine gelatin and sugar; dissolve in hot water. Add cold water, lemon juice, and reserved pineapple syrup. Chill until partially set.
Add pineapple and remaining ingredients. Turn into 2 quart mold. Chill until firm. Unmold.
Makes 12 servings
