Pork Chops and Apples

¾” or more thick pork chops, wiped and trimmed.

Sear the chops in a hot skillet. Season with salt and paprika. Cut apples in half crosswise and core. Place on the chops, skin side down. Cover apples with brown sugar. Cover bottom of the skillet well with hot cream (sweet or sour). Cover the pan closely. Bake the chops in a moderate oven 350˚ from 30 to 40 minutes. Baste them frequently. When they are done, thicken the drippings with flour.
