Party Chicken with Peaches

Chicken breasts
1 c Raw rice
2 c Chicken broth
4 oz (can) Sliced mushrooms
1-1/2 tsp Lemon juice
6 Cling peach halves, drained
2 Tbls Chopped parsley
¾ tsp Salt
1/8 tsp Curry
3 Tbls Orange marmalade
Dash Powdered cloves

Brown chicken breasts and set aside. Combine rice, chicken broth, mushrooms, chopped parsley, salt, and curry in chicken pan. Heat to boiling and turn into 2 quart baking dish lined with foil. Add chicken, fold, and seal foil. Bake 50 min in 350˚ oven. Combine orange marmalade, lemon juice, and powdered cloves. Spread on cut side of peach halves. Arrange around chicken. Bake uncovered 10 to 15 min more.

This was one of my mother’s favorite company dishes. It looked so elegant. I seem to remember something about maraschino cherries arranged on the peaches, but maybe I’m imagining that.
