Chicken Paprika

Cut up a 2-1/2# chicken as for frying. Sprinkle it with salt. Melt 1-1/2 Tbls butter and 1-1/2 Tbls lard in a heavy pot. Add a cup of chopped onion and simmer until browned. Add 2 tsp paprika and 1 c vegetable stock or water. When these ingredients are boiling, add the chicken. Simmer it covered until it is tender (about 1-1/2 hours). Stir 1 tsp flour into 1 c sour cream. Pour it slowly into the pot. Cook the chicken five minutes longer.
