2 Chicken fryers, cut up
1 Tbl Salt
1 tsp Paprika
¼ tsp Pepper
1-1/2 c Uncooked parboiled rice
¾ c Chopped onion
2 Tbls Butter
3-1/2 c Chicken broth or water, boiling hot
1 tsp Salt
1 tsp Celery salt
Sprinkle chicken with 1 Tbl salt, paprika, and pepper. Heat onion and rice in butter over direct heat until golden brown. Spread in 12x9x2” pan; add broth (or water), salt, and celery salt. Cover with chicken.
Cover pan tightly with foil. Bake in moderate oven (350˚) 1 hour; remove cover and bake 15 minutes or until meat is tender.
