Yogurt Cheese

Line colander with a couple layers of cheese cloth or paper toweling. Set colander over non-reactive pan (a glass quiche or cake pan works well). Spoon plain yogurt into lined colander; cover with another layer of cheese cloth or paper toweling. Set in fridge overnight. The whey in the pan can be used for soups and such. The yogurt cheese in the colander can be mixed with garlic, chives, salt, etc. to taste. Store in airtight container.
