Meat Sauce: In large skillet, brown 1# ground beef. Season to taste with salt and pepper. Stir in (1-12 oz can tomato paste, 2 cans of water), 1 pkg (1 oz) spaghetti sauce mix. Cover and simmer 15 min, stirring occasionally.
Cheese filling: Mix together with spoon 24 oz small curd cottage cheese, 1 Tbl finely chopped parsley, and 1# Mozzarella cheese (grated).
Lightly grease large baking dish and spoon in enough meat sauce to cover bottom; top with strips of cooked lasagna noodles, spread with part of cheese filling. Repeat layers, ending with meat sauce. If desired, sprinkle with ½ c Parmesan cheese. Bake at 350˚ 30 minutes. Let stand 5-10 minutes to set layers. Can be prepared day before and refrigerated. When ready to use, let stand at room temperature about an your, then bake 1 hour in 350˚ oven.
This is a basic recipe. You can certainly substitute Italian sausage for part of the beef. Or substitute crumbled tempeh or tofu, crumbles, or reconstituted TVP for the meat. Vegetables (chopped broccoli, cauliflower, carrots, kale, etc.) can be added to the cheese mixture.
