Tofu Burgers

1# Firm tofu, mashed
1 c Quick rolled oats
½ c Wheat germ
1 Onion, finely minced (opt)
2 Tbls Onion powder
2 Tbls Soy sauce
½ tsp Salt
½ tsp of each: basil, oregano, garlic powder
1/8 tsp Black pepper
Vegetable oil for frying
1 Egg (optional)

Mix ingredients together. Knead for a few minutes. Shape into six patties. Bake on lightly oiled cookie sheet at 325˚ for 25 minutes. Serve on whole wheat bread or buns. Top with lettuce, tomato, alfalfa sprouts, grated carrot, onion, pickles, catsup or mustard.

When she was in high school, Ginny preferred these burgers to any store-bought ones we could find.
