Spanish Rice

Salute 3 slices of minced bacon until brown. Remove the bacon. Wash 1/2 c rice. Drain, add and cook in the drippings until brown. Add 1/4 c thinly sliced onions and cook until brown. Add the bacon back in along with
1-1/4 c of canned tomatoes, ½ tsp salt, 1 tsp paprika, 1 clove garlic (optional), and 1 green pepper, seeded and minced.

Steam the rice in a double boiler for an hour, stirring frequently. Add water or additional tomato if the rice becomes too dry. It may be served with cheese sauce.
