3 Tbls Butter or margarine (or oil)
1 clove Garlic, minced
1 Green pepper, chopped
2 Stalks Celery, chopped
1 Onion, chopped
4-6 Precooked pork sausages, sliced (brats work well)
1 can (16 oz) tomatoes
2-3 c (about 1#) Raw, cleaned shrimp
2 c Water
1 Bay leaf
1 tsp Salt
1/8 tsp Pepper
Dash Cayenne pepper
1 c Uncooked rice (I use brown rice)
Sauté garlic, green pepper, onion, and sausage in butter. Add tomatoes, thawed shrimp, water, and seasonings. Bring to a boil. Stir in rice, reduce heat to simmer. Cover and cook until rice is fluffy, about 45 minutes to an hour. Remove bay leaf. One cup chopped ham may be substituted for pork sausage. May substitute 2 to 3 c cooked chicken or turkey for shrimp.
