Red Beans and Rice

1-1/2 c red beans and cooking water
1 Onion, chopped
1 Green pepper, chopped
Chopped garlic to taste
½ tsp Salt
¼ tsp Chili powder
Tobasco sauce to taste
Sausage
1 Tbl Flour
Cooked rice

Brown sausage with onion, green pepper, and garlic. Add flour, salt, Tobasco sauce, and chili powder; mix into a roux.  Add 1 c bean cooking water, heat to boiling, cook till thick. Add beans and liquid. Heat through. Serve over rice in bowls.

This is a pretty flexible recipe. You can add or subtract ingredients as it suits. It’s always good. This is one of Gary’s favorites.
