Cut 1# thin veal steak into 8 or 10 portions. Season with 1 tsp salt and 1/4 t paprika. Dredge in 1/4 c flour.
Heat 3 Tbls shortening. Sauté the meat quickly on both sides until it is brown. Reduce the heat. Cover the meat with 1-1/2 c Sliced onions, 6 Tbls Chili sauce, and 1-1/4 c Boiling water. Cover the pan closely. Simmer the contents for 25 minutes. Sprinkle the meat with 2 oz Grated cheese. Stir the mixture until the cheese is melted. Cook, drain, and rinse 5 oz noodles.
Melt 2 Tbls Butter. Stir in 1 Tbls Flour. Slowly stir in ½ c Chicken stock. Add this to the noodles. Reheat them.
Serve the noodles garnished with buttered crumbs. Serve the meat garnished with parsley.
