Sauté 1/2 c chopped onion and 1/2 c chopped green pepper in 2 T of butter. Add 1 c diced ham (Chopped cooked sausage or diced cooked bacon may be used) and 1 c Shredded cooked potatoes.
Beat 4 eggs with ½ c milk and add to above mixture and mix. Put in 9×9” pan. Sprinkle with 1/3 c shredded cheddar cheese. Bake in 350˚ oven 25 minutes.
Serve with fruit plate, rolls, and coffee.
