Cheesy Noodle Omelet

8 Eggs
1 tsp Salt
1/8 tsp Pepper
2 c Cooked noodles
1 c (4 oz) Cheddar cheese, shredded
2 Tbls Green pepper, chopped
1/Tbls Pimiento, chopped
¼ c Onion, chopped
½ c Milk
2 Tbls Butter,melted

In bowl, beat eggs and milk with salt, pepper, and pimiento. Fold in rest of ingredients, except butter. In large covered skillet, melt butter; pour in egg mixture. Cover and cook over medium to low heat 15 to 25 minutes or until set. Do not stir. Remove from skillet, cut into wedges, and serve immediately. Can also be baked at 325˚ for 55 minutes.

Makes 8 servings.
