Buttermilk Pie

Line a pie tin with pastry and bake. Beat for two minutes 1 cup buttermilk, 1 Tbls cornstarch, yolk of 1 egg, ½ c sugar. Cook until thick. When taken off stove, flavor with 1 tsp lemon extract. Pour into baked crust and add the beaten white of the egg to which two tbls of sugar have been added. Brown in oven five minutes.

Will serve six persons.

Time for preparation: 15 minutes
