Peanut Butter Cereal Bars

Combine 1 cup sugar and 1 cup light Karo syrup in a medium saucepan and bring to a boil, stirring occasionally. Remove from heat. Stir in 12 oz of peanut butter.

In a large bowl, combine 4 cups Special K cereal or Rice Krispies (I used the Special K) and 1 cup Peanuts, if you like. (They are good in this, but some people don’t like peanuts.)

Pour the still warm sugar mixture over the cereal and peanuts. At this point I continue to add more cereal, probably a couple more cups, just so it all still kind of sticks together. This way you get a bit more and also it’s not so sweet.

Press mixture into 9 x 13 buttered pan.

Lastly, gently melt together in the microwave 12 oz. of butterscotch and 6 oz. of chocolate. Stir them together. Doesn’t take very long. Pour over the bars and spread it to frost them. I put them in the fridge and check them in 15 to 20 minutes or just till the frosting sets, and then remove them and cut into pieces. They can stay at room temperature after that.
