1-1/2 C all-purpose flour
1/2 C whole wheat flour
1/2 C unsweetened cocoa powder
1-1/2 t baking soda
1 t salt
2 C shredded zucchini
1-1/2 C sugar
3/4 C olive oil
3 t vanilla extract
1/2 to 1 C chopped nuts (optional)
Preheat oven to 350˚ and spray 9 x 13 glass baking dish. In medium bowl, whisk together flours, cocoa, baking soda, and salt. In large bowl, combine zucchini, sugar, olive oil, and vanilla. Add flour mix to large bowl, stir until well mixed; add nuts if desired. Pour into prepared pan and bake 35-40 min.; cool completely before cutting.
