Dirty Rice

2 cups of water
2 teaspoons salt (or seasoned salt)
3 cups brown rice
2 lb. ground meat, split 1 lb. spicy & sweet breakfast sausage (or ground beef or turkey or chorizo…)
3 sliced sausages (grilled brats or cooked andoulle sausage)
1 lb. chopped, browned chicken breast
3-4 celery stalks
1 small onion
1 green bell pepper
2 cloves (minced) garlic
black pepper, white pepper, cayenne pepper, tabasco sauce, Tony Cacheres… to taste

Bring water and salt to a boil over high heat. Stir in rice. Cover pan and reduce heat to lowest possible setting. Cook undisturbed for 20 minutes, then remove from heat. Brown 2 lbs of ground meat in a big pot, drain. Add other meat to pot. Dice pepper and onion, add to meat pot. Chop celery, add to pot. Slice sausage, add to pot. Add garlic and spices/seasonings. Cook for 5 miuntes over medium heat. Stir in rice. Serve hot.
